Coca-Cola Icing

For the icing:

9 oz. semi-sweet chocolate, coarsly chopped (I use choc chips)

1/2 C. unsalted butter

1/3 C. Coca-Cola

1/3 C. light corn syrup

1/2 C. miniature marshmallows for garnish, (I omit these)

In the top of a double boiler set over simmering, not boiling, water over low heat, melt the chocolate and butter, stirring constantly.  Remove from heat and whisk in the Coke and corn syrup until well blended.  Wet aside to cool to room temperature.  Then spread the cooled icing in an even layer over the top of the cake.  Sprinkle with marshmallows, if desired.  Cut into squares and serve.
