Tortilla Quiche

 

I love quiche, however, I don't really like pie crust, so that's why this recipe really appealed to me.  The tortilla crust comes out light and crispyIt is a great source of calcium, and adds extra nutrition if whole-wheat tortillas are used. This  is adapted from a Kraft Foods recipe.

1 cup milk

2/3 cup nonfat, dry milk

5 eggs

1 tsp. garlic salt

1/3 tsp dill weed

1/3 tsp. salt

1 cup grated swiss cheese

1 1/4 cup cooked, chopped broccoli

3 tortillas, (7 1/2" each)

Preheat oven to 350 degrees.  Spray bottom of 9 1/2 inch pie pan with cooking spray.  Mix wet and dry milk together with eggs and spices until well blended.  Place one tortilla in bottom of pie pan, cut the others in half and over-lap to form sides.  Spread broccoli, then cheese over crust.  Pour egg mixture over all and bake at 45 minutes,(test middle with a knife), then allow to cool 10 minutes before cutting.
