Puffy Cheese Strata

This is an excellent do-ahead recipe for breakfast or brunch.  I sometimes make this for dinner, as well. 

8 slices white bread, crusts removed

1 1/2 c. each Monterrey Jack and Sharp cheddar cheese. (or use your favorites)

4 eggs

1 1/4 Cup milk

Whisk together milk and eggs.  Line 2 quart casserole dish with 4 bread slices, cover with 1/3 cheese mixture.  Place remaining bread on top, then pour egg mixture over the top, then cover with remaining cheese.  Refridgerate several hours or overnight.  Remove from fridge 45 minutes prior to baking.  Bake, covered at 350 degrees for 20 minutes, then remove cover and bake an additional 15-20 minutes. 

I like to add sliced mushrooms, ham, onions, bacon... whatever!  Just place them  between the layers of bread.
